May 26, 2008. 147/366. I ask, because I wasn't really focused on getting a picture on Monday, and so those are my choices for Project 366.

I went biscuits and gravy. With a poached duck egg. Yeah, the Mr. has this meal down, I think.

We went to the outlets up in Round Rock and a furniture store near us. And then to Sazon for dinner, where I didn't take any pictures - but it was delicious and we're going back if I have anything to say about it.

Coffee Break Muffins

Recipe from www.recipezaar.com:

Ingredients
2 cups all-purpose flour
1/3 cup sugar
1 tablespoon instant espresso powder
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/3 cup packed light brown sugar
1 cup strong coffee, cooled
8 tablespoons unsalted butter, melted and cooled (1 stick)
1 large egg
1/2 teaspoon pure vanilla extract

Directions
Position oven rack in center of oven; preheat to 400°; butter or spray 12 regular-size muffin cups in muffin pan; place muffin pan on baking sheet.
In a big bowl, whisk the flour, sugar, espresso powder, baking powder, cinnamon, and salt.
Stir in the brown sugar, making sure there are no lumps.
In a large glass measuring cup, whisk the coffee, melted butter, egg, and vanilla until combined.
Pour the liquid mixture over the dry ingredients and, with a whisk, gently but quickly stir to blend; don’t worry about being thorough—a few lumps are better than overmixing the batter.
Divide the batter evenly among the muffin cups.
Bake for about 20 minutes, or until a pick comes out clean.
Transfer pan to a rack and cool for 5 minutes before carefully removing each muffin from its mold.

Made this last week.

Thai style chicken soup. Got the recipe from America's Test Kitchen.

This soup turned out OK.
Couple of problems: 1) The recipe said to use 2 cans of coconut milk. So it turned out slightly too creamy for my tastes. 2) I didn't think the recipe would make such a HUGE pot. So I didn't put enough chicken and mushrooms in it. So it was mainly soup.

Sadly, I had to toss most of it several days later since I was the only one drinking it & I was getting really sick of drinking the same creamy soup 3 days in a row. =P
